Hidden Cost of Convenience: Ultra-Processed Foods Fuel Inflammation and Disease Risk
In South Asia, where one is used to seeing bustling markets filled with bright, healthy foods like lentils, rice, and fresh veggies, a more subtle transformation is taking place. Ultra-processed foods (UPFs) such as soda, packaged snacks, and processed meats are making their way into people's diets, frequently displacing nutrient-dense staple foods. A new study from Florida Atlantic University's Charles E. Schmidt College of Medicine, published in The American Journal of Medicine, indicates a concerning link: excessive UPF consumption is associated with increased inflammation, a major cause of heart disease, cancer, and premature mortality. These findings voice an urgent warning in South Asia and the Global South, where cardiovascular disease already kills millions of people each year.
Globally, UPFs account for approximately 60% of adult diets and 70% of children's diets in the United States, but their rise in India, Pakistan, and Bangladesh is also worrying. According to the World Health Organisation, noncommunicable diseases, such as heart disease, account for 61% of all deaths in South Asia. Historically, health research has focused mostly on Western people, leaving a knowledge deficit for other communities. This study, which examined 9,254 U.S. adults from the National Health and Nutrition Examination Survey, attempts to bridge that gap by providing findings applicable to global groups experiencing similar dietary changes.
The study discovered that those who consumed the most UPF (60-79% of daily calories) had an 11% increased risk of elevated high-sensitivity C-reactive protein (hs-CRP), a sensitive inflammation marker and predictor of cardiovascular disease. Moderate consumers (40-59%) saw a 14% greater risk, whereas those with reduced intake (20-39%) experienced a nonsignificant 7% increase. The danger was greatest in certain groups: adults aged 50 to 59 had a 26% higher risk of elevated hs-CRP than younger individuals, and obesity increased the risk by 80%. Smokers had a 17% increased risk, while physical inactivity had no significant association.
According to Allison H. Ferris, M.D., FACP, senior author and chair of the FAU Department of Medicine, those who consume the most ultra-processed foods have much higher levels of high-sensitivity C-reactive protein, a major marker of inflammation, in their blood. "These results carry important implications not only for clinical practice and public health strategies but also for future research aimed at... reducing the health risks associated with ultra-processed food consumption."
The ramifications are severe for South Asia, where healthcare institutions are frequently overburdened and access to fresh foods is constrained by cost or urbanisation. Marketed as easy and economical, UPFs are invading urban marketplaces, exacerbating obesity and diabetes rates. About 77 million people in India alone suffer from diabetes, often associated with dietary changes that prioritise processed foods. The study's authors also notice an increase in colon cancer among younger persons, which could be linked to UPFs, a trend that is rising in South Asia as diets become more western.
"C-reactive protein…is a simple, affordable, and highly sensitive measure of inflammation as well as a reliable predictor of future cardiovascular disease," said Charles Hennekens, M.D., First Sir Richard Doll Professor of Medicine. "We believe that healthcareprofessionals may wish to consider actively engaging with their patients about the risks of UPFs and benefits of increasing whole food consumption."
The findings highlight the importance of public health intervention in the Global South, where ethnic diets rich in whole foods can be exploited. However, Hennekens points out, "The multinational companies that produce ultra-processed foods are very influential, much like tobacco companies were in the past, so policy changes… may take time." Governments might prioritise clearer food labelling and encourage traditional diets in schools, but cost remains a hurdle.
Looking ahead, this study recommends that South Asian and Global South populations be included in future studies to refine dietary advice. It serves as a reminder to families that even little changes, such as switching from packaged snacks to whole grains, can help them stay healthy. As UPFs become more prevalent in worldwide diets, awareness is the first step towards restoring wellness.
