Smart Eating, Dangerous Drinking: A Bowl of ‘Palak’ May Protect Brain, But Water Might Harm It
For decades, Indian grandmothers have vowed that green leafy vegetables are the cornerstone of optimal health. A new international study validates those findings—with a worrying twist that directly affects Indian homes. The study reveals that while nitrates from vegetables such as palak, methi, and sarson may protect the brain from dementia, nitrates from drinking water and processed meats may raise the risk, even at current "safe" levels.
The study, undertaken by Edith Cowan University (ECU) in Australia in partnership with the Danish Cancer Research Institute, monitored more than 54,000 Danish people for 27 years. It looked at how nitrates and nitrites from various sources influence the risk of dementia, particularly early-onset cases.
Dementia, according to specialists, is caused by multiple factors. It is determined by genetics, age, and lifestyle. However, nutrition may have a more important impact than previously considered. "The source of nitrate is critically important," said Dr Nicola Bondonno, postdoctoral research fellow at ECU's Nutrition & Health Innovation Research Institute and the Danish Cancer Research Institute.
The findings showed a distinct separation. People who absorbed more nitrates from veggies were less likely to acquire dementia. In contrast, people who ingested more nitrates and nitrites from animal-based meals, particularly red and processed meats, as well as drinking water, were at a higher risk.
Why does the same chemical behave differently? The answer is in what comes with it. According to ECU Associate Professor Catherine Bondonno, vegetables provide a natural safety net. "When we eat nitrate-rich vegetables, we are also eating vitamins and antioxidants, which are thought to help the nitrate form the beneficial compound nitric oxide while blocking it from forming N-nitrosamines, which are carcinogenic and potentially damaging to the brain," according to her.
Simply said, veggies deliver nitrates as part of a protective bundle. Nitric oxide improves blood vessel function, which increases blood flow to the brain. However, meat and water do not contain these antioxidants. Meat includes heme iron, which may promote the development of dangerous N-nitrosamines.
This distinction is especially crucial to India. Traditional winter foods such as palak paneer, sarson ka saag, bathua, and chaulai—roughly equivalent to one cup of baby spinach per day—fall nicely into the study's "protective" category. At the same time, India is becoming increasingly concerned about the quality of its drinking water, particularly in agricultural areas where fertiliser and urea are extensively used.
Notably, this is the first study to link nitrate levels in drinking water to an increased risk of dementia. In Denmark and the European Union, the nitrate limit in water is 50 mg/litre. India's IS 10500 standard establishes a similar level of 45 milligrammes per litre. However, the researchers discovered an elevated dementia risk at doses as low as 5 mg per litre.
Dr Bondonno advocated prudence. "This is only one observational study and cannot prove that nitrate directly causes dementia," claimed the researcher. "The increase in danger at the individual level is minor, and people should not stop drinking water. Water is far healthier than sugary beverages. However, our findings indicate that authorities should reconsider long-term, low-level exposure.
For Indian families, the message is pragmatic rather than frightening. Eat more green leafy vegetables, avoid red and processed meats, and be mindful of water quality, especially for homes that rely on borewells or groundwater in farming areas. While household RO systems may lower nitrates, scientists suggest more comprehensive monitoring and policy revision are required.
The simple bowl of palak seems to be on the right track for brain health as science catches up with tradition. The bigger concern would be whether the water in our glass is keeping up.
